(Healthy) Banana Cinnamon Pancakes
This recipe is easy and it tastes great so it finds its way onto our table regularly. I love it also for its versatility. I made these the other day and also included some nutmeg and ginger. I haven't tried adding fruit to them yet but I would dare say you could do that as well. I am a huge fan of sweet potato pancakes (thank you Cracker Barrel), but I have yet to find the perfect recipe. Perhaps this one could be adapted...if so you'll see a slightly different version of this recipe coming soon!

Tradtitional Thursday (Recipe Ed.)
Popovers
I
love making these, mainly because they are so versatile.
They can easily accompany a small casserole dish at a ladies’ luncheon or act
as a substitute for cornbread at dinnertime. And the best thing about them is
how easy they are to make!
Ingredients:
2 cups
self-rising flour
3 Tblsp.
Mayo
1 cup
milk
1 tsp.
sugar
Combine all ingredients in a small bowl and mix thoroughly.
Spoon into well greased muffin tins (I grease mine with Brummel and Brown
yogurt-found in the butter isle-or with coconut oil). Bake in a preheated oven
at 350° for about 20 minutes. Yields approximately 1 dozen regular size muffins.

Traditional Thursday
Cobbler
I am a huge supporter of healthy
eating. I constantly try to fix healthy meals for my family and incorporate
organic ingredients into our diet. Of course, there are always those recipes
that have been handed down from through the family that don’t quite fall into
this category. For this reason I adopted the motto, “Everything in moderation,”
and I enjoy those southern staples. One such being cobbler. Don’t believe me? When
was the last time you went to a church potluck where cobbler wasn’t present?-As
I was saying, cobbler is a southern staple and every good southern girl has a
go-to cobbler recipe. Here’s mine…
Ingredients:
1 stick
margarine (melted)
¾ cup
self rising flour
½ cup
sugar
¾ cup
milk
aprrox.
1 cup of your favorite fruit (i.e. blueberries, blackberries,
cherries, etc.-peach is pictured below)
Mix all ingredients and pour into an oven-safe (I use a
8x8 glass dish). Bake at 350° for 35 to 45 minutes.

Traditional Thursday (Recipe Ed.)
½ cup
margarine
(I
prefer not to use margarine so I substituted Brummel & Brown spread.)
½ cup
peanut butter
¾ cup
brown sugar
1 egg
½ tsp.
vanilla
¼ tsp.
salt
½ tsp.
baking soda
1 ¼ cup
rolled oats
¾ cup
whole wheat flour
Icing:
1 ¼ cup powdered sugar
3 Tbsp. sweetened condensed milk
Preheat
your oven to 350°. Add butter & peanut butter in large bowl & melt in
microwave for about 30 seconds. Add brown sugar. Mix in egg & vanilla until
all ingredients are well blended. Add salt, baking soda, oats & whole wheat
flour. Make a ball out of your dough. Place on a cookie sheet lined with wax
paper, then use your fork to make criss-cross marks and flatten. Cook for 8-10
minutes and allow cookies to cool before icing. (I chose not to ice this
particular batch. They are really great either way.)
Make
icing by mixing powdered sugar & sweetened condensed milk together until
smooth. Drizzle icing over cookies. Enjoy!

Traditional Thursday (Recipe Edition)

These
are one of the first things I ever learned to cook. I love them because they are so easy to make and they can be served for so many different occasions. These are great to take to a breakfast or brunch. My family
loves to find these in the fridge when they’re in need of a snack and they are
an absolute must for Saturday football games.
Ingredients:
1lb. hot or mild sausage (your preference)
3 ½ cups biscuit mix (I often use Bisquick)
1 8oz. jar of cheese sauce
Combine all ingredients with
hands.
Shape loosely into small balls
and bake at 350 degrees for 15 to 20
minutes.

Traditional Thursday (Recipe Edition)
Fruit
Tea
In
the South, sweet tea is a staple and every southern girl has her own favorite
recipe for making it. In the summer, we get even fancier with our sweet tea. I
am a huge fan of Fruit Tea, especially in the summer and that is the recipe I’m
sharing with you today. Enjoy!
Ingredients:
6 regular tea bags
4 cups boiling water
1 ½ cups sugar
1 (6oz.) can frozen orange juice concentrate
1 (6oz.) can frozen lemonade concentrate
10 cups water
2 teaspoons almond flavoring
Place tea bags in boiling
water. Let steep 5 minutes. Remove tea bags. Add sugar and stir until
dissolved. Add remaining ingredients. Stir until well mixed. Best if allowed to
ripen in refrigerator overnight. Mix well before serving.
